Ingredients...
1kg Maris Piper potato
100g duck or goose fat fat (for a luxurious taste), or 100ml/3˝fl oz olive oil
2 tsp flour
Maldon salt , to serve
Ok...basically, start by heating up a roasting tray in the oven, then peel the potatoes and cut them into 4 even bits. Boil the potatoes for a couple of minutes. While doing this, put your choice of fat in the roasting tin and make it really hot.
Drain the potatoes, but do it roughly. You want the edges of the potatoes to go a bit fluffy, so shake it back and forth a bit. Sprinkle them with flour, and continue shaking so the flour is thinly applied, but even. Then drop them in the fat so they sizzle, and shake them about and roll them around so they're evenly covered.
Roast them for 15 minutes, turn them, 15 minutes roasting, turn them, and then leave them until they're golden. The colouring should be a bit uneven, but thats good
