Just getting into piss play with a new sub. Should I limit the amount of piss she drinks?

I'd discuss it with her... is it her first time? First time with you? First time drinking, but not doing pee? Consider everything, and see if you want/should limit the amount she drinks (not necessarily the amount you pee/peed on her) or not :)
