Heston Blumenthal (english chef, does crazy stuff with food and nitrogen)
Mario Fadria (Spanish chef, mixes food and science to the extreme. Co owner of El buli in spain, the other owner is a scientist)
All are exclent chefs and are a few of my favorites. Check it out and you will definatly see some crazy stuff.
